Earth Day Sugar Cookie Recipe

Things you will need for these chewy sugar cookies

1 cup of butter, softened
1/4 cup of granulated sugar
1 egg
2 tsp of vanilla extract (or 1 tsp. vanilla bean paste)
2 1/2 cups of all purpose flour
1/2 tsp of baking soda
1/2 tsp baking powder
1/4 tsp salt
blue & green food coloring
Instructions
Preheat oven to 350 degrees and line your baking sheet with parchment paper or these super awesome reusable silicon sheets.
In a large bowl with a standing mixer or hand mixer, cream together the butter and sugar until light and fluffy. *approximately 1 minute
Add in the egg and vanilla extract and beat until combined
Add in flour, baking soda, baking powder and salt. Mix until just combined making sure to scrape down the sides every now and then.
Take out half of your dough and put to the side.
Add your green food coloring to the remaining dough in bowl and mix (how much depends on brands and types, start with 3 drops, alter as desired)
Take green dough out and set it to the side
If there's green coloring in the bowl or beater, rinse real quick
Stick the other half of your plain dough in the mixer and add blue coloring (again until desired color is achieved)
Take blue dough out and set on the counter next to the green dough
Take some green dough, then blue dough and a little more green dough (alter back and forth to mix it up) and roll into approximately a 1" ball and place on your cookie sheet about 2" apart until you have approximately 9-12 balls on the cookie sheet
Place in the oven and bake for 10-11 minutes.
Allow to cool

This recipe makes approximately 24 cookies. We added sugar eyes to ours because we happened to have them in the pantry...
